2 cups almond flour

1 teaspoon baking powder

1/2 teaspoon ground cinnamon
1/2 teaspoon salt

3/4 cup super seed butter

1/2 cup coconut sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract

1/3 cup vegan dark chocolate chips

1/3 cup vegan white chocolate chips

1/2 cup roughly chopped pecans
Directions
Preheat the oven at 350F (180C). Lightly grease a cookie baking pan or line with parchment paper.
In a large bowl, whisk together the almond flour, baking powder, cinnamon, and salt, set aside.
In a large mixing bowl, add the seed butter, coconut sugar, and eggs, beat with an electric mixer on high for about 1 to 2 minutes. Add dry mixture and blend until combined. Stir in the chocolate chips and pecans.
Using an ice cream scoop for large cookies, place dough on a baking pan about 3 inches apart. Shape with cookie cutters. Add extra chocolate chips and pecans on top if desired.
Bake for 12 minutes, or until lightly golden brown around the edges. Remove from the oven and let cool in the pan before transferring to a wire rack for further cooling. Serve and enjoy!
