1 large egg

1 tablespoon can coconut milk or milk of your choice

1 tablespoon superseed seed butter

1/3 cup blanched almond flour

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/8 teaspoon ground ginger
3 tablespoon finely grated carrots packed

Optional toppings: 1/3 cup vegan white chocolate chips

Optional toppings: 1/3 cup Coconut whipped cream

Directions
In a medium bowl, add the egg, coconut milk, and seed butter, whisk until smooth.
Add the almond flour, baking powder, cinnamon, and ginger, whisk until combined.
Add the carrots, stir until there are no clumps. Pour into a mug.
Microwave for 90 seconds to 2 minutes, until cooked through.
Let it cool for 5 minutes, then add your favourite toppings and enjoy
