2 cups almond flour

1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

3/4 cup super seed butter

3/4 dairy-free white chocolates, melted
2 teaspoons vanilla extract
1/3 cup finely grated carrots
Directions
Preheat the oven at 350F (180C). Lightly grease a cookie baking pan or line with parchment paper.
In a large bowl, whisk together the almond flour, baking powder, cinnamon, and salt, set aside.
In a large mixing bowl, add the seed butter, maple syrup, and vanilla, beat with an electric mixer on high for about 1 to 2 minutes. Blend in the carrots. Add dry mixture and stir until combined.
Using an ice cream scoop for large cookies, place dough on a baking pan about 3 inches apart. Shape with cookie cutters. Bake for 12 minutes, or until lightly golden brown around the edges. Remove from the oven and let cool in the pan before transferring to a wire rack for further cooling. Serve and enjoy!
