Gluten-Free Grain-Free Blueberry Pancakes

Makes: 10 pancakes

INGREDIENTS

  • 1 pkg blueberry keto pancake mix (Flourish)
  • 1-1/3 cup can coconut milk (Cha’s Organics)
  • 1 large egg

Topping:

  • wild blueberry spread (Crofters)
  • coco whipped cream (So Delicious)

INSTRUCTIONS

  1. Whisk pancake Mix, coconut milk, and egg in a large bowl. Let the mix rest for 5 minutes.

  2. Heat a large non-stick skillet or griddle over medium heat. Once hot, add ¼ cup of the pancake batter. Let the pancakes cook for 2-3 minutes, flip and continue cooking for another 2 minutes.

  3. Once the pancakes are cooked, remove them from the heat and repeat until all the batter is used.

  4. Top with your favourite toppings, and enjoy!
