Ingredients
2 tablespoons olive oil
1 cup coarsely chopped mushrooms
1/2 cup uncooked rice
1/2 teaspoon season salt
1-1/2 cup water
1 cup cranberry trail mix
Directions
Heat oil in a pan on medium heat and add the mushrooms and rice.
Sauté for about 2 minutes.
Add the season salt and water and stir until everything is combined.
Cook covered on low heat for about 20 minutes or until rice is cooked through.
Remove from oven, add the trail mix, stir, and let sit about 5 minutes. Serve warm or cold. Enjoy!
