Perfect almond flour muffins that are grain-free, Paleo, and easily made Keto, too! Vary them in multiple ways with different add-ins and flavorings.

Ingredients

2 and 1/2 cups almond flour/meal

1 tsp baking powder

1/2 tsp baking soda

1/2 cup chia jam

1/4 cup seed butter
1/4 cup dairy-free milk or yogurt

1 cup trail mix
Directions
Preheat the oven to 350F. Line 12cups in a standard 12-cup muffin tin with paper or foil liners.
In a large bowl whisk the almond flour, baking powder, and baking. Set aside.
In a small bowl, whisk the eggs, jam, seed butter, and milk or yogurt.
Add the wet ingredients to the dry ingredients, stirring until blended. Fold the dried fruit and nuts.
Divide batter evenly among prepared cups. Bake in a preheated oven for 18 to 20minutes until set at the centres and golden brown at the edges. Move the tin to a cooling rack and let muffins cool as desired. Serve and enjoy!
