Easy healthy gluten-free low carb keto pancakes with strawberry chia jam are delicious and nutritious.

Makes: 4 – 6 pancakes
- 2 tablespoons can coconut milk – Cha’s Organics
- 2 large eggs
- 2 tablespoons strawberry chia jam – Healthy Crunch
- 1/2 cup pancake/waffle mix - Comensoli
In a large bowl, whisk the can coconut milk, eggs, and jam until combined. Add the dry mixture, and gently stir just until moistened. Let sit for 3 minutes.
Grease griddle or nonstick skillet and heat over medium heat. Pour about 1/4 cup of batter for each pancake. Cook for about 3 minutes, or until edges are golden and small bubbles start to form on top. Flip the pancakes and cook for 2 to 3 minutes, or until browned and cooked through. Serve with your favourite topping and enjoy!
