Gluten-Free Chicken and Waffle

Make this easy healthy gluten-free Chicken In Waffle for dinner or lunch.

Time: 15 minutes  |  Makes: 8 waffles

INGREDIENTS

1 cup cassava flour

1-1/2 teaspoons baking powder

1/4 teaspoons salt

1-1/4 cup coconut milk

1 large egg

2 tablespoons vegetable oil

1 cup cooked chicken, finely chopped

1 teaspoon vegetable seasoning


INSTRUCTIONS

In a large mixing bowl, whisk together the cassava flour, baking powder, and salt.

Add the coconut milk, egg, and oil and beat to a smooth batter. Stir in the chicken and seasoning.

Lightly grease a waffle maker and heat until hot. Pour the batter into the waffle make and cook until golden brown, about 5 minutes. Repeat with the remaining batter. Serve and enjoy!
