Peachy Watermelon Salad
Peachy summer energy with this Peachy Watermelon Salad with red onions, cucumbers, and fresh mint along with a simple vinaigrette made with peach spread!!

Ingredients
- 1 small seedless watermelon, cut into 1-inch cubes or melon balls
- ¼ cup diced red onions
- 2 tablespoons torn mint plus extra for garnish
- 1 tablespoon olive oil
- Kosher salt and freshly cracked black pepper to taste
- 1 can (398ml) sliced peaches 2 yellow peaches, diced
- 2 Persian cucumbers, sliced into ½-inch thick rounds
For the Vinaigrette
- 1/4 cup peach spread by Crofter’s Premium Spreads
- 2 tablespoons white wine vinegar
- Kosher salt and freshly cracked black pepper to taste
Instructions
In a large bowl, add the watermelon, peaches, cucumbers, red onions, mint, and olive oil. Season the mixture with salt and pepper and toss to combine. Set aside.
In a medium bowl, whisk the white wine vinegar, and the peach spread until combined. Add to watermelon mixture and gently stir until fully coated. Refrigerate for 30 minutes if desired to let the onion marinate. Remove from the and season with salt, pepper, and extra mint. Serve and enjoy!
