INGREDIENTS
8 oz. (300g) gluten-free dry macaroni
1 cup frozen veggies, thawed
1 can (19 0z, 540ml) white beans, drain and rinse
1 orange bell pepper (155 g)
1/3 cup dairy-free milk
1/2 tsp season salt
INSTRUCTIONS
Cook the macaroni in a pot of salted water until just past al dente (7 to 9 minutes).
Add frozen veggies to the pasta a couple of minutes before being done or microwave for 3 minutes. drain and rinse quickly.
Meanwhile, add beans, bell pepper, rice milk, and season salt in a food processor. Process until very smooth. In a large bowl, add the pasta with the veggies and the bean mixture. Stir until blended. Serve and enjoy!
