Tuna Beet Almond Patties

Packed with protein and easy to make.
2 cans tuna, rinsed and drained
2 large eggs
1 teaspoon (3 grams) vegetable seasoning
1/4 cup (25 grams) almond meal
1/2 cup can beets, coarsely mashed
Salt and ground pepper to taste
Oil for frying
In a large bowl, add the tuna, eggs, seasoning and almond meal. Stir to combine. Add the beets and gently stir into the mixture. Add salt and pepper as desired. Form the mixture into 10 to 12 balls, then flatten them lightly into patties.
Heat the frying pan with oil over medium heat. Fry the patties for 3 – 5 minutes per side, turn once until golden. Serve with your favourite sauce.
