Celebrating Lima Bean Respect day on April 20th
The Best Lima Bean Potato Soup Ever!
Makes 4 Cups
Giving Lima Bean some respect.
2 tablespoons (30g) butter
1 small (80g) onion, chopped
1 medium (100g) carrot, diced or thinly sliced
1 medium (200g) potatoes, peeled and diced
1 sweet (70g) red pepper, chopped
2 (40g) celery ribs, thinly sliced
1 can (15 oz) lima beans, rinsed and drained
2 teaspoons (7g) vegetable seasoning
1 teaspoon (6g) season salt
4 cups water
1/2 cup (115g) can coconut milk
On stove, over medium setting, heat the butter in a large saucepan. Add all the vegetables and sauté for 5 - 7 minutes.
Add the Lima Beans and spices. Then add the water; bring to a boil, cover, and simmer for 20 minutes.
Add coconut cream and heat through. Remove form stove, let slight cool. Optional; Transfer about 2 cups to a food processor or blender or use a handheld immersion blender. Return to saucepan and reheat and serve. Serve and enjoy!
