Chocolate Cake Love – Grain-Free and Vegan

Makes One 9-inch Cake Pan
2-1/2 cups (330 grams) cassava flour
1/3 cup (35 grams) cacao powder
1 teaspoon (6 grams) baking soda
1-1/2 cups (400ml can) coconut milk
1 cup (250 grams) plain yogurt
1 teaspoon (4 grams) vanilla extract
1 cup (150 grams) coconut sugar
1 cup (150 grams) vegan chocolate chips
Preheat oven at 350F (180C). Grease or line with parchment paper a 9-inch round cake pan.
In a large bowl, combine the flour, cacao powder, and baking soda, mix well and set aside.
In a large mixing bowl, add the coconut milk and yogurt, beat with an electric beater. Beat in the coconut sugar. Gradually beat in the flour mixture until well blended.
Stir in 1/2 of the chocolate chips. Pour batter in the prepared baking pan. Spread evenly on top the other half of the chocolate chips. Bake for 30 – 35 minutes or until toothpick or cake skewer comes out clean. Remove from oven and cool before serving. Enjoy!
