Sweetcorn and Black Bean Fritters

Ingredients

  • 1 cup (160 grams) can black beans, drained and rinsed
  • 1 cup (140 grams) can sweetcorn, drained and rinsed
  • ¼ cup (60 grams) water
  • 1 large egg
  • 1 teaspoon (3 grams) vegetable seasoning
  • 2 tablespoons (4 rams) fresh parsley, finely chopped
  • ⅓ cup (40 grams) cassava flour
  • 2 tablespoons (20 grams) olive oil for frying
  • Salt and ground black pepper to taste
  • Instructions

    Step 1

    1. In a large bowl, roughly mash the beans with a fork, add the corn, water, egg, vegetable seasoning and parsley, stir to combine. Add the cassava flour and stir to combine.

    Step 2

    1. Heat the oil in a large frying pan over medium heat. Use a 1/4 cup-measure or ice cream scoop to measure batter into frying pan. Press light with a spatula. Cook for 2 to 3 minutes each side until golden brown and cooked through. Serve and enjoy with your favourite dipping sauce.
