Ingredients
1 cup (160 grams) can black beans, drained and rinsed
1 cup (140 grams) can sweetcorn, drained and rinsed
¼ cup (60 grams) water
1 large egg
1 teaspoon (3 grams) vegetable seasoning
2 tablespoons (4 rams) fresh parsley, finely chopped
⅓ cup (40 grams) cassava flour
2 tablespoons (20 grams) olive oil for frying
Salt and ground black pepper to taste
Instructions
Step 1
- In a large bowl, roughly mash the beans with a fork, add the corn, water, egg, vegetable seasoning and parsley, stir to combine. Add the cassava flour and stir to combine.
Step 2
- Heat the oil in a large frying pan over medium heat. Use a 1/4 cup-measure or ice cream scoop to measure batter into frying pan. Press light with a spatula. Cook for 2 to 3 minutes each side until golden brown and cooked through. Serve and enjoy with your favourite dipping sauce.
