Sweet Potatoes Lentils and Broccoli Slaw
Lunch / Dinner / Vegan / Vegetarian / Meatless / Eggless /
2 tablespoons (24 grams) olive oil
2 cups (166 grams) sweet potatoes, cut in strips or bite-sized cubes
2 cups (180 grams) broccoli slaw (carrots, broccoli & red cabbage)
1 cup (170 grams) canned lentils, rinsed and drained
1 teaspoon (3 grams) vegetable seasoning
1/2 cup (110 grams) vegetable stock
Salt and ground black pepper to taste
Heat the oil in a large saucepan or stockpot over low heat. Gently sauté the sweet potatoes for 10 minutes.
Stir in the broccoli slaw, lentils and seasoning, sauté for 5 minutes. Add the stock and seasoned with saute and pepper for desired taste. Cook for 5 minutes or until lentils are tender. Serve and enjoy!
