Sunflower Seeds Oat Bread
Makes 1 Loaf
3 cups (380 grams) sunflower seeds
2 cups (230 grams) oat flour
2 tablespoons (22 grams) baking powder
1/2 teaspoon (2 grams) salt
1 cup (265 grams) plain dairy-free yogurt
3/4 cup (160 grams) dairy-free milk
1/4 cup (70 grams) maple syrup
1/4 cup (50 grams) seed oil
Preheat oven to 400F (205C). Grease loaf pan or dish (9x5), then line with parchment/baking paper with overhang (to lift loaf out). Set aside.
To ground sunflower seeds, add to a food processor and blend until very finely grounded (not butter smooth).
In a large bowl, whisk together the grounded sunflower seeds, the oat flour, baking powder, and salt. Set aside.
In a medium mixing bowl, whisk together yogurt, milk, maple syrup, and oil.
Add liquid mixture to the seed mixture. Stir with a mixing spoon or spatula until flour is just mixed in. Quickly pour into loaf, carful press down and smooth out.
Bake until skewer inserted in the centre of the loaf comes out clean, about 45 to 55 minutes. Let loaf cool in pan on wire rack for 15 minutes, remove from the pan and let cool on wire rack completely. Serve and enjoy!
About 15 minutes before, you may need to reduce oven temperature to 350F (180) or slight cover with foil.
