Raisin Coconut Pie with Pre-made Pie Shell

Makes: One 9-inch Pie
3/4 cup (115 grams) brown sugar
3 large egg yolks, room temperature
2 tablespoons (32 grams) vegan butter or margarine, softened
2 teaspoons (8 grams) vinegar
1/2 teaspoons (2 grams) ground cinnamon
1/8 teaspoon (1 gram) salt
1 cup (155 grams) raisins
3/4 cup (75 grams) shredded coconut
3 large egg whites, room temperature
1 Unbaked 9-inch pie shell (optional)
Preheat oven at 350F (180C). Lightly grease 9-inch baking dish if using. Set aside.
In a large bowl, combine the sugar, yolks, butter, vinegar, cinnamon, and salt, beat well with an electric mixer.
Add the raisin and coconut to a food processor and process until finely grounded. Stir in yolk mixture.
Beat egg whites in a medium blow until stiff. Fold into raisin mixture. Pour into pie shell. Bake for 30 – 35 minutes until set. Cool to desired temperature. Serve and enjoy!
