Ingredients
2 cups (180 grams) rolled oats
1/3 cup (45 grams) ground flaxseeds
1 teaspoon (4 grams) baking powder
1 cup (150 grams pkg) nuts-seeds-dried fruit mix
1/4 cup (60 grams) vegan butter, room temperature
1/2 cup (130 grams) almond butter
1/3 cup (55 grams) brown sugar
1/4 cup (65 grams) maple syrup
1/2 cup (70 grams) vegan chocolate pieces
1 teaspoon (4 grams) vanilla extract
Directions
Preheat oven at 350F (180C). Grease a 9-inch or 8-inch square baking pan and line with parchment paper.
In a large bowl, combine the oats, flax seeds, and baking powder. In a food processor, finely chop the nut/fruit mix. Add to the oat mixture. Set a side.
In a large saucepan on medium heat, add the butter, almond butter, sugar, maple syrup and chocolate chips. Heat gently, stirring occasionally, until the chocolate chips has melted. Remove from heat and stir in the vanilla. Add to the oat mixture and stir until combined.
