Pecan Oat Cookies (Vegan)

1/2 cup (115 grams) vegan butter unsalted, room temperature
1/3 cup (70 grams) brown sugar
1 teaspoon (4 grams) vanilla extract
1/8 teaspoon salt
1 1/3 cup (145 grams) oat flour
3/4 cup (80 grams) pecans, finely chopped
Topping: 16 pecan halves
Preheat oven at 350F (180C). Lightly grease cookie baking pan or line with parchment paper.
In a large bowl, add the butter, beat with an electric mixer on high for about 1 minute. Add sugar and beat until light, about 1 minute. Beat in vanilla, salt, and oat flour. just until dough comes together. Fold in pecans.
Using a cookie scoop or tablespoon measure, place dough on baking pan about 3 inches apart. Roll into balls, add pecan halves, pressing lightly to flatten mounds of dough.
Bake for 14 minutes, rotating baking pan halfway through for evenly baking. Remove from oven, cool in pan for 5 minutes, then transfer to wire rack for further cooling. Serve and enjoy!
Pecan topping is optional. If not using pecan toppings. Press lightly with a fork or with your fingers.
