Pecan Chocolate Cashew Mousse Pie (Vegan)

Makes 1 9-inch Pie
2 cups (220 grams) pecans, whole or pieces
1-1/2 teaspoons (5 grams) coconut oil, melted
1 teaspoon (6 grams) maple syrup
3 tablespoons (30 grams) brown sugar
1 tablespoon (14 grams) water
2 cups (275 grams) raw cashews
1/2 cup (100 grams) coconut oil
1/2 cup (115 grams) can coconut milk
1/2 cup (80 grams) brown sugar
1 teaspoon (1 gram) cinnamon
3 tablespoons (15 grams) cacao powder
1 teaspoon (3 grams) vanilla extract
Topping (optional): finely chopped pecans and chocolate pieces
Preheat oven at 325F (160C). Lightly grease 9-inch pie glass or ceramic baking dish.
Place pecans in food processor and pulse until finely grounded like fine breadcrumbs.
In a small bowl, whisk together coconut oil, maple syrup, brown sugar, and water. Add to the pecans in the food processor. Process until mixture begins falling from sides of bowl. Scrape down once. Continue to process until mixture combined.
Press mixture evenly into baking dish. Bake for 20 minutes or until lightly browned. Remove from oven and allow cool before using.
Pre-soak cashews: In a large bowl with lid, add the cashews and enough water to fully cover the cashews. For quick soaking, use hot water, cover, and let sit for about 2 – 3 hours. When fully soaked, all the cashews will float.
Add pre-soak cashews to food processor, puree until finely grounded. Add the coconut oil, coconut milk, brown sugar, cinnamon, cacao powder, and vanilla. Puree until smooth, about 5 – 7 minutes.
Pour the mixture over pie crust. If using topping, sprinkle evenly over pie. Put pie into refrigerator or freezer to set for about few hours. Once set, keep in refrigerator. Serve and enjoy!
For a non-chocolate version, add 3 tablespoons almond meal (flour) and omit the chocolate pieces from the topping.
