1/2 cup (60 grams) oat flour
1 tablespoon (11 grams) brown sugar
1 teaspoon (4 grams) baking powder
1/4 teaspoon (1 gram) salt
1/4 teaspoon (1 gram) cinnamon
1/2 cup (105 grams) rice milk
1 large egg
1 teaspoon vanilla extract (2 grams)
1/4 cup (35 grams) finely diced peeled apples
1/2 cup (60 grams) pecans, finely chopped
1/4 cup pecans
1/4 cup peeled diced apples
1/4 cup maple syrup
In a large bowl, combine oat flour, sugar, baking powder, salt, and cinnamon. Set aside.
In a small bowl, whisk the rice milk, egg and vanilla. Stir into flour mixture. Add apples and pecan and gently stir until combined.
Grease griddle or nonstick skillet and heat over medium heat. Pour about 1/4 cup batter for each pancake. Cook for 3 minutes, or until bottoms are golden and small bubbles start to form on top. Flip the pancakes and cook for 1 to 2 minutes, or until browned and cook through. Serve with your favourite topping and enjoy!
To Make Toppping
Add all ingredients into a food process and puree until desired consistency.
