Oatmeal Muffins with Goji Berry Trail Mix

1 cup (110 grams) cassava flour
1 tablespoon (15 grams) baking powder
1/2 cup (85 grams) brown sugar
2 cups (175 grams) rolled oats
3/4 cup (90 grams) trail mix, chopped small (reserved 1/4 cup for topping)
2 large eggs
3/4 cup (185 grams) non-dairy milk (recipe – rice milk)
1/3 cup (70 grams) seed or vegetable oil
1 teaspoon (4 grams) vanilla extract
Preheat oven to 375F (190C). Grease a 12-cup muffin pan or line with 12 muffin paper liners.
In a large bowl, sift together the cassava flour and baking powder. Stir in the sugar, oats, and trail mix. Create a well in centre and set aside.
Use an ice-cream scoop or spoon the batter in the muffin pan. Bake for 20 minutes, until risen, golden brown and firm to the touch.
Remove from oven and let muffins cool in pan for 5 minutes, then transfer to wire rack to finish cooling. Serve and enjoy!
