A Snackalicious Mexican Chocolate Sugar Crisp Cookies
Preheat the oven at 350F (180C). Grease or line with parchment paper cookie baking sheet.
In a large mixing bowl, add the butter and sugar, beat with an electric mixer on high speed until combined, about 1 – 2 minutes. Beat in the egg for about 1 – 2 minutes. Beat in the melted chocolate chips for about 1 – 2 minutes.
In a medium bowl, whisk together the oat flour, cinnamon, chili powder, baking soda, and salt. Add to the creamed mixture and mix well. Stir in chocolate chips.
Drop by tablespoonfuls or use a cookie scoop and place 2 inch apart on the prepared baking sheet. Bake for 8 - 10 minutes, or until lightly golden brown around edges. Remove from the oven and let cool for 5 minutes before transferring to the wire rack. Serve and enjoy!
