Lemony Apricot Dessert

Makes One 9-inch Pie Plate
3 large eggs
1/2 cup sugar or Zuga (natural sweetener)
1/2 cup coconut cream or milk
3 tablespoons cassava flour
1 teaspoon lemon Zest (grated lemon skin)
1/4 teaspoon salt
4 apricots, halves, pitted and cut into wedges
Preheat oven at 350F (180C). Grease 9-inch ceramic pie plate. Set aside.
In a large bowl, beat the eggs with the sugar or Zuga, coconut cream, lemon zest, and salt until very smooth.
Pour batter into the prepared baking dish and arrange the apricots on top.
Bake 30 - 35 minutes, until the custard is just set. Let stand for 10 minutes, then dust with confectioner's sugar. Serve and enjoy!
