Ingredients

1 cup (125 grams) cassava flour

1/2 teaspoon (2 grams) baking powder

1/4 cup (60 grams) vegan butter or margarine, cold

1 teaspoon (2 grams) herb seasoning

60 grams cheddar cheese, finely grated

1 large egg
-
2 tablespoons (24 grams) dairy-free milk
Directions
Preheat oven at 375F (190C). Line 2 baking pans with parchment paper. Set aside.
In a large bowl, sift the flour and baking powder. Add the butter, mix with a metal whisk, or use pastry knife to create breadcrumb-like mixture. Mix in the seasoning and cheese.
In a small bowl, whisk the egg and dairy-free milk until blended. Add to flour mixture and mix with a flat spatula, using a cutting action until mixture come together. Press together into a ball.
Roll the pastry between sheets of parchment paper to 1/8-inch (3 mm) thickness. Remove the top sheet of paper and cut into rounds or whatever shape you like using a cookie cutter. Recipe uses 2-inch (5 cm) cookie cutter. Place onto prepared baking pan. Re-roll the remaining pastry and repeat to complete crackers for baking.
Bake for 12 minutes (may need to rotate tray at 6 minutes) or until lightly browned. Transfer to wire rack to cool. Serve and enjoy!
