Fresh Strawberry Scones - Grain-Free

1-1/4 cup (170 grams) cassava flour
3/4 cup (75 grams) almond flour
1 teaspoon (6 grams) baking powder
1/4 teaspoon (1 gram) baking soda
1/4 teaspoon (1 gram) salt
1/3 cup (60 grams) organic sugar
1/3 cup (80 grams) vegan butter, cold
3/4 cup (120 grams) hulled and diced fresh strawberries
1/2 cup (115 gams) plain yogurt
1 large egg
Preheat the oven at 350F (180C). Line baking sheet with parchment paper or grease baking pan.
In a medium bowl, whisk together the cassava flour, baking powder, baking soda, and salt.
Combine butter into flour mixture, using fork, pastry cutter, or rub together with her hands. Mixture should resemble dry breadcrumbs. Stir in strawberries. Set aside.
in a small bowl, whisk yogurt and egg. Stir into dry mixture and until mixture is evenly moist.
Divide batter using ice-cream scoop or 1/3 cup measuring cup onto prepared baking pan. Bake for 15 – 17 minutes or until edges of scones are golden brown and a wooden toothpick inserted in the centre comes out clean. Serve and enjoy with your favourite topping!
