Ingredients
3/4 cup (90 grams) oat flour
1 teaspoon (4 grams) baking powder
1/4 teaspoon (1 gram) salt
1/3 cup (90 grams) rice milk, room temperature
2 tablespoons (40 grams) fig jam
2 tablespoons (24 grams) vegan butter, melted
1 teaspoon (3 grams) apple cider vinegar
1/4 cup (40 grams) dried figs, stem removed, finely chopped
1/2 teaspoon Fig jam and melted chocolate for each donut
Filling (optional)
Directions
Preheat the oven at 350F (180C). grease donut pan.
In a large bowl, combine the oat flour, baking powder and salt. Add the rice milk, fig jam, butter, and apple cider vinegar. Stir well to combine. Stir in the dried figs.
For half-moon donuts, use a 1/2 tablespoon measure to pour batter into prepare donut pan. Bake 10 – 12 minutes, remove from oven and allow to cool for 5 minutes before transferring to a cooling rack.
Filling
For filling, add jam and then melted chocolate. Serve and enjoy!
