Super easy Coconut Vanilla Pudding. A Snackalicious treat that will be a favourite.
Coconut Vanilla Pudding
1 cup (235 grams) coconut can milk
2 tablespoons (28 grams) natural granule sweetener or sugar
2 tablespoons (14 grams) coconut flour
1 tablespoon (10 grams) cassava flour
1 teaspoon (4 grams) vanilla extract
Over medium-high heat, place the coconut milk a medium saucepan.
While the coconut milk heats up, combine the remaining ingredients in a mixing bowl.
When milk begins to simmer, slowly pour the sugar mixture into the coconut milk, whisking while pouring to dissolve. Continue to whisk gently until the mixture begins to thicken.
Pour pudding into a serving container. Chill for at least 2 hours before serving. Serve and enjoy!
