Ingredients

2 extra-large eggs, separated

1/3 cup (70 grams) sugar

1/4 cup vegan chocolate chips grounded

1 teaspoon (4 grams) vanilla extract

1/8 teaspoon (1 gram) salt

2/3 cup (95 grams) cassava flour
Directions
Preheat oven to 375F (190C) Line 2 cookie baking pan with parchment paper. Set aside.
In a large bowl, place the egg yoks and half the sugar and beat with a handheld electric mixer for 5 – 7 minutes, until the mixture is pale and thick. Beat in the chocolate and vanilla until blended. Set aside.
In another large bowl, beat the egg whites with clean handheld electric mixer paddle until they form soft peaks, then gradually beat in the remaining sugar and salt. Fold the egg whites into the egg yolk mixture. Then sift in the cassava flour and fold in until combined.
Spoon the batter into a pastry bag fitted with a 1/2-inch plain tip, then pipe 3 inches long batter onto prepared baking pan. Bake for 10 minutes, or until pale in golden. Transfer to a wire rack to cool. Decorate as you wish. Serve and enjoy!
Recipe Note
To make it keto use Zuga natural sweetener and replace cassava flour with almond flour
