Cauliflower Kale Dip

Makes about 2 cups
2 cups (250 grams) cauliflower florets
1 cup (25 grams) kale, ribs removed, coarsely chopped
1/4 cup (50 grams) extra-virgin olive oil
2 tablespoons (25 grams) sesame tahini
1 teaspoon (4 grams) fresh lemon juice
1 teaspoon (2 grams) herb or vegetable seasoning
salt and ground black pepper to taste
In a large saucepan, add a steamer basket with about 2 inches of water on medium-high heat. Add the cauliflower; bring to a boil, then reduce to a simmer. Cover and let cook for about 10 minutes or until florets are tender. Add kale, cook covered for 2 minutes or until leaves is wilted.
Transfer cauliflower and kale to a food processor, and add the olive oil, tahini, lemon juice, and seasoning. Process until smooth. Salt and/or pepper to taste. Serve and enjoy!
