Caramel Pecan Cranberry Coconut Popcorn (Vegan)
Snacks / Vegan / Eggless / High Fibre
Makes 8 cups
1 bag of microwave popcorn (popped)
1 cup (105 grams) pecans, chopped
1/2 cup (30 grams) shredded coconut
1/2 cup (70 grams) dried cranberries
3/4 cup (150 grams) vegan butter
3/4 cup (130 grams) brown sugar
1/2 cup (140 grams) maple syrup
1/2 teaspoon (3 grams) salt
1/4 teaspoon (1 gram) baking soda
1/2 teaspoon (1 gram) vanilla extract
Preheat oven at 250F (120C).
In a large bowl mix together the popped corn, pecans, coconut, and cranberries. Set aside
In a large saucepan on medium heat, add the butter, brown sugar, maple syrup and salt. Heat and stir until boiling. Boil without stirring for 5 minutes.
Stir in baking soda and vanilla. Remove from heat, add the popcorn mixture, and stir until all pieces is coated. Spread on a large ungreased shallow pan.
Bake for 45 minutes in prepared oven, stirring every 15 minutes. Cool thoroughly. Serve and enjoy!
