Blueberry Popover Inspired
Breakfast / Brunch / Desserts / Snacks
3 tablespoon (40 grams) vegan butter
One can (400 ml) coconut milk
3 large eggs, beaten
3 tablespoons (45 grams) organic sugar
1 teaspoon (4 grams) vanilla extract
3/4 cup (110 grams) cassava flour
1/2 cup (65 grams) blueberries, fresh or frozen thawed
Preheat oven at 375F (190C) and lower rack to 2 from bottom of oven. Generously grease muffin tin or popover tin with butter.
In a large mixing bowl, beat milk, eggs, sugar, and vanilla until well blended. Whisk or beat in the flour in small batches until batter is smooth. Divide batter into prepared tins about 3/4 filled. Add even amount of blueberries onto batter.
Bake in preheated oven for 5 minutes. Reduce heat to 350F (180C) and continue baking for 25 minutes or until centre is no longer moist. Serve and enjoy!
