2 cans of 398ml can sliced peaches
1/4 cup (45 grams) Zuga natural sweetener
1/2 tablespoon (2 grams) lemon juice
1 teaspoon (4 grams) vanilla extract
2 teaspoons (5 grams) cassava flour
1 cup (130 grams) cassava flour
1 tablespoon (12 grams) egg replacer
1 teaspoon (5 grams) baking powder
1/4 teaspoon (1 gram) salt
1/3 cup (65 grams) vegan butter, cold
3/4 cup (170 rams) almond milk
Preheat the oven to 425F (220C). Grease baking dish (pie, square or casserole).
In a large bowl, stir together the peaches, sweetener, lemon juice, vanilla, and the 2 teaspoons cassava flour. Add to the prepared baking dish. Bake in the oven for 20 minutes. Remove from the oven.Meanwhile, to make the cobbler topping; in a large bowl, combine the cassava flour, all but 2 tablespoons of the sweetener, egg replacer, baking powder, and salt. Add the butter; use a strong wire whisk or rub between your fingertips until the mixture resembles crumbs. Mix the milk into the dry ingredients using a fork until a soft, sticky dough forms. If dough seems dry, stir in an extra tablespoon of milk at a time.
Reduce the oven temperature to 400F(200C). Remove peaches from the oven and drop spoonfuls of the mixture over the surface. without smoothing. Sprinkle with remaining sweetener, return to the oven. Bake for additional 15 – 20 minutes or until the topping is golden brown and firm. Remove from the oven and serve as desired. Enjoy!
