Almond Pizza Crust or Flatbread

Makes One 9-inch Round Crust
2 large eggs
2 tablespoon (22g) olive or vegetable oil
1 tablespoon (8g) coconut flour
2 cups (210g) blanched almond meal (flour)
1/4 teaspoons (1g) baking soda
1/4 teaspoon (1g) salt
Preheat the oven to 350F (180C) and position rack in the centre. Lightly grease a pizza stone, or line baking pan with parchment paper; set aside.
In a large bowl, whisk the eggs and olive oil until well blended. Then add the coconut flour and whisk until no lumps remain. Stir in the almond meal, baking soda and salt.
Flatten the dough onto the prepare baking surface. Cover with a parchment, then evenly roll out to form 9-inch circle. Bake for 12-15 minutes, until lightly browned along edges.
Top with your favourite pizza toppings and bake for another 8-10 minutes. Remove from the oven and let cool for 2 minutes. Serve and enjoy!
